Ingredients:
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 cans black beans, rinsed and drained
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- Salt and pepper, to taste
- 8-10 taco shells
- Toppings of your choice (e.g., shredded lettuce, diced tomatoes, shredded cheese, sour cream, hot sauce)
Instructions:
- In a large pan, heat the olive oil over medium heat.
- Add the diced onion and cook until softened, about 5 minutes.
- Add the minced garlic and cook for another minute.
- Add the black beans to the pan and mash with a fork or potato masher until slightly broken down.
- Add the chili powder, cumin, paprika, salt, and pepper to the pan and stir to combine.
- Cook the black bean mixture for 5-7 minutes, or until heated through.
- Warm the taco shells in the oven or on the stove.
- Fill each taco shell with the black bean mixture and your desired toppings. Serve and enjoy!
