black bean tacos

Ingredients:

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cans black beans, rinsed and drained
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste
  • 8-10 taco shells
  • Toppings of your choice (e.g., shredded lettuce, diced tomatoes, shredded cheese, sour cream, hot sauce)

Instructions:

  1. In a large pan, heat the olive oil over medium heat.
  2. Add the diced onion and cook until softened, about 5 minutes.
  3. Add the minced garlic and cook for another minute.
  4. Add the black beans to the pan and mash with a fork or potato masher until slightly broken down.
  5. Add the chili powder, cumin, paprika, salt, and pepper to the pan and stir to combine.
  6. Cook the black bean mixture for 5-7 minutes, or until heated through.
  7. Warm the taco shells in the oven or on the stove.
  8. Fill each taco shell with the black bean mixture and your desired toppings. Serve and enjoy!
