Ingredients
1/2 cup butter ( at room temp)
1 cup of persimmon pulp
(Make Pulp / Puree: cut stem off, cut in half, scoop persimmon with seeds in blender. Then push through a sieve until you make one cup of pulp)
1 tsp. soda sprinkled over pulp
1 cup sugar
1 egg beaten
2 cup flour
1 cup walnuts
1 cup raisins
1 tsp. cinnamon
1/2 tsp cloves
1/2 tsp nutmeg
1/2 tsp salt
Directions:
Beat Pulp and soda
Then cream butter (30 secs first on its in own in whipped or blended) and then add sugar until creamy (this adds air into the cookies)
Add egg, flour, spices and raisins
Drop by spoon on greased cookie sheet.
Bake at 375 degrees for 12 to 15mins
