Ingredients:
1 cup vital wheat gluten (Winco has this in bulk for around 3.50lb a pound). 100 grams is 80 grams of protein!
Seasonings:
1 TB liquid smoke
1 TB Worcershire Sauce (Vegan version if PBFD)
1 TB Dark Soy Sauce
1 TB garlic powder
1 TB onion powder
1 TB Fennel Seed
1 TSP Red Pepper Flakes
1 TSP Black Pepper
1 Block Tofu OR 1 Can of White Beans
1 cup Vegetable broth for steaming the Seitan
Directions
Take all ingredients but the Vital Wheat Gluten and blend in a blender.
If using Tofu, take block and water of tofu and place in blender, then blend until smooth. If using white beans blend beans and reserve aquafaba (juice from can)
Add other ingredients and blend.
Remove to a mixing bowl
Add 1 cup of Vital Wheat Gluten, mix in like a dough makes a ball. Make sure its not to wet and not too dry, like making bread.
Kneed to dough, the more you need the gummier seitan can become. Form it into a log. You can also make strips, use braiding technique for shredded chicken style, google that for techniques.
Place in instapot
Add a cup of broth to the base of the instapot. Close, sent on high pressure for 45 minutes. Vent closed. Turn off the instapot, let sit for 10 minutes, then release the steam valve.
Take the log and place into a container and place in fridge over night or for at least 8 hours. The next day cut into thin slices, or dice into cubes to add to a meal.
Use the slices for a deli sandwich or on a burger bun. Add some sauces to enhance the flavor.
