What you will need:
Buy a tortilla press online or at Mexican grocery store.
Kitchen towels needed to keep tortillas warm.
Cast Iron Skillet (home goods store or sale at Kohl's / Macy's)
Oil to season cast iron skillet
Ingredients:
2 cups masa harina (corn flour for tortillas)
1 1/4 cups warm water
Pinch of salt
Instructions:
In a mixing bowl, add the masa harina and salt. Mix well.
Gradually pour in the warm water while stirring the mixture with a wooden spoon or your hands until you have a soft, smooth dough.
Knead the dough for a few minutes until it's firm and elastic. No dry cracking of corn batter.
Divide the dough into small balls (about 2 inches in diameter).
Flatten the dough balls into round discs using a tortilla press.
If using a tortilla press, place a piece of plastic wrap on both sides of the press to prevent sticking.
Lay on parchment paper on counter.
Heat a cast-iron skillet or griddle over medium-high heat. Skillet must be hot off the start.
Place the flattened tortillas on the skillet or griddle and cook for about 50 seconds to 1 min seconds on each side, or until slightly browned. Adjust stove heat as needed to get to this level.
Flip 3rd time for tortilla to expand and raise slightly, then pull from skillet.
Keep the tortillas warm in a towel or tortilla warmer until ready to serve.
