Ingredients:
3 TBs or less of Extra Virgin Olive Oil
1.5 TB of lemon juice
1.5 TB of Whole Grain Mustard
1/2 Cup Marinated Artichoke Hearts
16 ounces of Tomatoes (Diced)
1 Avocado (Diced)
1 can chickpeas
5 to 8 mint leaves
5 to 8 basil leaves
1/3 cup nuts, walnuts, pistachios, almonds (chopped)
Black Pepper
Salt
Directions:
chop the tomato's, place in strainer over bowl, reserve the liquid in a bowl.
Add Lemon Juice, Mustard, and EVOO into bowl for dressing
Stir in the tomato's, artichoke hearts, chickpeas, nuts, and chopped herbs
