Sauteed Kale

Ingredients

1 bunch of kale
3 tablespoons of Olive Oil
2 cloves garlic (or two frozen garlic cubes)
1/2 cup vegetable or chicken stock
Salt & Pepper
2 tablespoons red wine vinegar

Directions & Tips

medium to medium high heat a large saucepan that has a lid

remove kale leaves from stems

fine chop kale leaves

mince garlic

add olive oil to saucepan

when oil is hot before flash point add garlic to bloom for about 30 seconds

add vegetable or chicken stock

add kale and top saucepan to steam

when kale starts to break down like spinach it is done

add 2 tablespoons of red wine vinegar at end and mix in

serve immediately hot with main protein dish
