Pasta - Penne Alla Vodka Sauce

Ingredients
1/4 Olive Oil
2.5 cups yellow onions (cook until translucent)
1 tbsp minced garlic
1.5 tsp dried oregano
1/2 tsp red pepper flakes
1 cup vodka
2 cans whole peeled plum tomatoes, drain and set aside juice 
Salt and Pepper 
3/4 lb to 1lb of penne pasta
2 tb fresh oregano leaves
1 cup heavy cream
1/2 cup freshly grated parmesan cheese 

Directions

Heat pan add some water and cook onions for about 5 mins until translucent
add garlic, dried oregano, and red pepper flakes add vodka and simmer for 5 to 7 minutes, until mixture is reduced by half
crush tomatos with hands 
add salt and pepper cover with lid and bake for 1 hr

bring pot of water and boil penna pasta until al dente bring out tomato sauce and blend in food processor until smooth add back into pot add fresh oregano, cream, and 1 tsp of salt and some pepper and cook for a 2 more minutes turn off heat, add parmesan serve hot
