Ingredients:
4 cups cooked potatoes, diced
1 onion, chopped
2 garlic cloves, minced
4 cups chicken or vegetable broth
1 cup milk
1/4 cup butter
Salt and pepper to taste
Optional toppings: shredded cheese, green onions, bacon bits, sour cream
Instructions:
In a large pot, melt the butter over medium heat. Add the onion and garlic and sauté for 2-3 minutes, or until softened.
Add the diced potatoes and broth to the pot. Bring the mixture to a boil, then reduce heat and let simmer for 15-20 minutes.
Using an immersion blender, puree the soup until smooth. Alternatively, you can transfer the soup to a blender and puree it in batches.
Stir in the milk and season with salt and pepper to taste.
Serve the soup hot, garnished with your desired toppings, if using.
