Ingredients:
- 1 pound fresh shrimp, peeled and deveined
- 4 kiwis, peeled and diced
- 1 jalapeno pepper, seeded and finely chopped
- 1/2 cup fresh cilantro leaves, chopped
- 1/2 cup freshly squeezed lime juice
- 1/4 cup freshly squeezed lemon juice
- 1/4 cup orange juice
- 1/4 cup red onion, finely chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- Tortilla chips or lettuce leaves for serving (optional)
Instructions:
1. Prepare the shrimp by bringing a pot of salted water to a boil. Add the shrimp and cook for about 2-3 minutes, or until they turn pink and opaque. Be careful not to overcook them. Once cooked, remove the shrimp from the water and transfer them to a bowl of ice water to cool. Drain and pat dry.
2. Cut the cooked shrimp into bite-sized pieces and place them in a large bowl.
3. Add the diced kiwis, chopped jalapeno, and cilantro to the bowl with the shrimp.
4. In a separate small bowl, whisk together the lime juice, lemon juice, orange juice, red onion, garlic, salt, and pepper.
5. Pour the citrus marinade over the shrimp, kiwi, jalapeno, and cilantro mixture. Gently toss to combine, making sure all the ingredients are coated with the marinade.
6. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld together.
7. Before serving, give the ceviche a gentle stir. Taste and adjust the seasoning if needed.
8. Serve the shrimp ceviche with kiwi, cilantro, and jalapeno with tortilla chips or lettuce leaves for a refreshing appetizer or light meal.
Enjoy your shrimp ceviche with the delightful combination of flavors from the kiwi, cilantro, and jalapeno!
