Smoky Turkey Meatballs or Mini Loaves (2 lbs)


No breadcrumbs • No spinach • Big flavor

Ingredients:
2 lbs ground turkey

2 eggs

½ cup grated yellow or red onion

½ cup finely grated carrot (moisture + subtle sweetness)

2 cloves garlic, minced (or 1 tsp garlic powder)

2 tbsp olive oil

2 tbsp grated Parmesan

1 tsp dried oregano

½ tsp dried thyme

½ tsp dried basil

½ tsp smoked paprika

¼–½ tsp red chili flakes (to taste)

1–1½ tsp salt (start with 1 tsp if your parm is salty)

½ tsp black pepper

Optional: 1 tbsp Dijon mustard (extra tang and depth)

Optional Glaze:


Mix together:

¼ cup ketchup

1 tsp balsamic vinegar

1 tsp maple syrup or honey



Brush on tops around the 15-minute mark while baking for a sweet-savory finish.

Instructions:
Preheat oven to 400°F.

In a large bowl, mix everything together gently until combined. Don’t overwork the turkey—it keeps things tender.

Shape into meatballs or mini loaves. (For even baking, try a muffin tin for loaves!)

Place on parchment-lined baking sheet or lightly greased muffin tin.

Bake for 20–25 minutes, or until internal temp reaches 165°F.

Glaze: Add glaze at 15 minutes if using.
